AVOCADO-PEACH BRUSCHETTA

 

INGREDIENTS (serves 6 to 8)

1 avocado, diced
1 peach, diced
½ cup chopped fresh basil
1 tablespoon white balsamic vinegar
1 tablespoon olive oil, plus more for drizzling
1 teaspoon agave
¼ teaspoon sea salt
¼ teaspoon freshly ground black pepper
1 small French baguette, cut on an angle into
½-inch-thick slices
Balsamic glaze, for drizzling

Preheat the oven to 425°F.

In a large bowl, lightly toss together the avocado, peach, basil, vinegar, olive oil, agave, salt, and pepper. Set aside to let the
flavors come together while you toast the bread.

Place the bread slices on a large rimmed baking sheet and drizzle lightly with olive oil. Bake for 5 to 8 minutes, until lightly browned on top.

Place the bread on a platter, top each slice with the avocado-peach mixture, and drizzle with balsamic glaze.
